Un’altra lotta con il cibo: Questa volta: “Fish and Chips”

Prima era la“amatriciana-gate” dopo uno chef celebre ha osato mettere l’aglio nella pasta adorata dagli abitanti di Amatrice (vedete il mio post precedente).  Poi un altro famoso chef italiano ha commesso un delitto quando ha messo del burro nella pasta al pesto.  Adesso, una diversa lotta con il cibo.

Il fish and chips, ovvero pesce e patatine, è uno dei piatti più gustosi e conosciuti della imagesgastronomia anglosassone.  Giusto?  Certo.  Ma qual è la loro origine?  “Sono stati portati nel Regno Unito dagli immigranti veneti,”  secondo la teoria raccontata agli alunni delle scuole romane.

Gli inglesi non ci stanno.  Il titolo sul giornale, “Il Telegraph:”  L’Italia rivendica l’invenzione del fish and chips!  Gli inglesi sono stati offesi (o come la regina Vittoria direbbe, “non ci divertiamo”).    Sarebbe come dire che la pasta al pomodoro non è italiana.   Il fish and chips, cioè il pesce immerso in una pastella molto densa e successivamente fritto, con le patate fritte tagliate a bastoncino, è da sempre considerato il piatto tipico degli inglesi.

download (1)Tutto parte dal “menu europeo” introdotto nelle mense scolastiche della capitale.  Ai 145.000 alluni delle materne, delle elementari e delle medie vengono infatti serviti 15 menù ispirati ad altrettanti Paesi europei.  Tra questi:  croque monsieur (Francia), fish and download (2)chips (Regno Unito), gulasch (Ungheria), paella valenciana (Spagna), Wiener Schnitzel (Austria).  La scopo era promuovere la multiculturalità gastronomica ed infondere nei bambini un senso di appartenenza all’Unione Europea.  Tuttavia, in una descrizione del fish and chips consegnata ai bimbi, viene sostenuto che il piatto può aver avuto origine in Italia.  A riprova viene citato Charles Dickens e il suo romanzo Oliver Twist sostenendo che gli immigranti veneti potrebbero aver portato nelle isole britanniche la classica combinazione di pesce fritto e patatine.

images (2)Andrew Crook, tesoriere del National Federation of Fish Friers, l’associazione che riunisce oltre 8600 friggitorie disseminate nel images (3)Regno Unito, spiegò di non aver “mai sentito parlare di italiani che avevano portato il fish and chips qui da noi.”  Ufficialmente, l’immigranto ebreo Joseph Malin è considerato il fondatore del primo negozio di Fish ‘n’ Chips nell East End di Londra nel 1860.

Sebbene il fish and chips sia stato tra i piatti più popolari tra gli alunni romani, il progetto del menù europeo pare non abbia riscosso molto successo.  Anzi.  È stato attaccato da molte mamme che senza troppi giri di parole l’hanno definito “cibo spazzatura.”  Sono state raccolte firme ed è stata avviata una petizione online per chiedere l’immediato ritiro di questi cibi “grassi, precotti e prefritti,” e la loro sostituzione con “piatti più sani a livello nutrizionale e più vicini alla cucina mediterranea.”

Non mi sorprende.  Sembra che non sia tipico per gli italiani di “rivendicare” un piatto come “fish and chips,” a meno che non il pesce sia saltato, le patate si sono arrostite, e il piatto abbia un nome più elegante.    Avete qualch suggerimento?

Another Food Fight: This Time: Fish and Chips

First there was “Amatriciana-gate” when a celebrated Italian chef put garlic in the beloved pasta from Amatrice (see my previous post on this topic).   Then another famous Italian chef committed a crime when he put butter in his pesto pasta.  Now… a different type of food fight.

Fish and chips is one of the most well-known dishes in the Anglo-Saxon repertoire.  imagesTrue?        Yes.  But where did it come from?  “It was brought to the United Kingdom by Venetian immigrants,” according to a theory told to students in Roman schools.

The English do not agree.  The headline in their newspaper, the Telegraph: “Italy claims the invention of fish and chips!”  As Queen Victoria would say, “we are not amused.” It would be like saying the tomato pasta was not Italian.  Fish and chips, that is, fish soaked in a dense batter and then fried, with fried potatoes (cut into little sticks, as the Italians say) has always been considered a typically English dish.

download (1)It all begins with a “European menu” introduced into the school refectories in Italy’s capital.  About 145,000 students were served 15 menus inspired by the same number of European countries.  Among them were croque download (2)monsieur (France), fish and chips (Great Britain), goulash (Hungary), paella Valenciana (Spain), Wiener Schnitzel (Austria).  The goal was to promote gastronomic multiculturalism and to infuse in the kids a sense of belonging to the European Union.  Yet, in a description of fish and chips taught to the children, it was held that the dish could have originated in Italy.  To prove the case, Charles Dickens was cited in his novel Oliver Twist, which claimed that Venetian immigrants could have brought to the British Isles the classic combination of fried fish and potatoes.

images (2)Andrew Crook, treasurer of the National Federation of Fish Friers, images (3)the association that manages more than 8,600 vendors of fried food throughout the United Kingdom, explained that he never heard of such a thing.  Officially in Great Britain, the Jewish immigrant Joseph Malin is considered the founder of the first “Fish ‘n’ Chips” store in the east end of London in 1860.

Although fish and chips was among the most popular dishes with the Roman students, the European menu project did not appear to meet with much success.  On the contrary.  It was attacked by many Italian mammas who didn’t mince words when they called it “garbage food.”  They collected signatures from an online petition that asked for the immediate removal of these “fatty, precooked, and fried” foods, and the substitution with healthier dishes at a nutritional level closer to Mediterranean cuisine.

I am not surprised.  It seems to me out of character for the Italians to claim fish and chips as one of their own…unless the fish is sautéed, the potatoes are roasted, and it is blessed with a more elegant name.  Any suggestions?

Le campagne animaliste d’Italia: A Pasqua scelgi veg

L’agnello è un piatto molto tradizionale a Pasqua, soprattutto in Italia.  Ma forse i tempi stanno cambiando.  Ecco 4 cartelloni (appesi alla fermata dell’autobus o sul retro dell’autobus, per esempio) a Genova, Brescia, e Pordenone.  Mai come quest’anno le iniziative di questo tipo si sono moltiplicate nelle città italiane.  Incoraggiano la gente a non uccidere gli animali per mangiare la cena:  invece mangi le verdure questa Pasqua.
